3 Egg omelette

Not 2 eggs but 3 egg Omelette – 3 eggs gives you the right amount of protein. Approximately 21 grams.

Ingredients:

  • 3 Eggs
  • finely cut spinach
  • finely cut mushrooms
  • finely slice tomatoes
  • Or any finely sliced vegetable leftover in vegetable drawer

Method:

Whisk thoroughly the 3 eggs, pour into heated frying pan with olive oil.

On one side only of the omelette mix, place the spinach, mushrooms, tomatoes etc, sprinkle with Parmesan and slowly cook the bottom through.

Flip one side of the egg mix (without the vegies) on top of the other side and cook through again for a few minutes.

Serve with kimchi, and sliced avocado. Or a light green salad.
