Tamara’s world famous banana pancake

Two options: Kid friendly and a high protein pimped up version.

Ingredients:

Kid friendly version:

  • 1/2 mashed banana
  • 1 x egg whisked into the banana
  • Optional blueberries

Pimped up high protein version:

  • 1/2 mashed banana
  • 1x egg whisked in
  • 1T ground linseed
  • 1 serve of protein/collagen powder
  • Optional blueberries

To serve:

1T coconut/plain greek yoghurt/vanilla yoghurt for kids

Sprinkle of cinnamon

Method:

Mash banana, whisk thoroughly the egg (I just use a fork) stir in blueberries if using. Pour into heated frying pan with olive oil. Cook through until ready to flip.

Serve with vanilla yoghurt.

 

Protein version.

Mash banana, whisk thoroughly the egg (I just use a fork) stir in 1 serve of protein powder and 1T of fresh ground linseed, add blueberries if using. Pour into heated frying pan with olive oil. Cook until can safely flip.

Serve with high protein or coconut yoghurt.

Dust with cinnamon. ENJOY!
