Half low carb for the adults and half normal pasta used for the kids, jam packed with beef mince and grated vegies
This is a weekly staple in our household and to make it low carbohydrate for the adults – I make half using thinly sliced aubergine’s as a pasta replacement. Then the normal lasagne pasta for kids

Find a generic lasagne recipe online – to the beef mince I will always add grated carrot and grated courgette, cut up mushrooms and capsicum can be used too. This really tops up the vegetable content.
