Paneer Turmeric Curry

A healthy anti inflammatory plant based meal. 

Ingredients:

  • 1 block of paneer cut into chunks
  • 1 x green capsicum cut thinly
  • 2 onions cut finely
  • 3 garlic cloves crushed
  • Thumb size piece of ginger cut into matchsticks
  • 2T of tomato paste
  • 1cup of vegetable stock
  • 1 can chopped tomatoes
  • 1 can chickpeas
  • Spices ( 1tsp turmeric, 1tsp ground cumin, 1tsp ground coriander, ½ tsp ground chilli.
  • Half bag baby spinach (I also add some cut up broccoli to make it more green)

Method:

Fry onion and garlic in olive oil, add spices, chickpeas, capsicum, cut up paneer – cook through for a few mins then add can tomatoes, stock – simmer for 10mins – add spinach (broccoli if using goes in with capsicum)

Can add squeze of lemon and top with 1T natural yoghurt.

Can serve on cauliflower rice instead of rice to make low carbohydrate.
