Healthy Chocolate Chip Cookies

You (and your children) will love these healthy chocolate chip cookies! They’re quick and easy to prepare and can be frozen for use in lunchboxes. Try them and let me know what you think!

Ingredients:

  • 1 egg
  • 1/2 c coconut oil (melted)
  • 1/2 c rice malt syrup (fructose free sweetener)
  • 1/4 c water (warm)
  • 1/4 c dessicated coconut
  • 2 c wholemeal flour ( or to make GF can use either buckwheat/almond meal of GF flour)
  • 2/3 c dark chocolate cut up into small pieces (best is 72% whittakers)

Method:

  • Mix egg and oil.
  • Dissolve rice malt syrup and water add to egg.
  • Stir in coconut oil and flour then add chocolate.
  • Leave mixture to stand for 10mins (less sticky).
  • Bake 15mins 180 degrees.
